Super Food : Gotu Kola

Gotu Kola is a native to India, Sri Lanka and other parts of Asia. In India, Gotu kola is regarded as perhaps the most spiritual of all herbs. It is used by some yogis to improve meditation and is said to develop the crown chakra (the energy center at the top of the head), and balance the right and left hemispheres of the brain. It is regarded as one of the most important rejuvenative herbs in Ayurvedic Medicine. Luckily for us this super food is easily found in your local health food shop and can be added to your morning smoothie or salad, as it has no distinct taste or smell.

Gotu Kola Pesto

½ cup Gotu Kola leaves, stems removed

½ cup spinach

1 clove garlic, center removed

3 tbsp nutritional yeast

2 tbsp pine nuts, or cashews

¼ cup extra virgin olive oil

Place Gotu Kola, garlic, yeast, and nuts in a blender or food processor, and process while slowly adding in the oil.

Use as a salad dressing, on your brown rice pasta or as a quinoa sauce.
