1 cup chopped onion
1 tbsp fresh dill
Cracked sea salt
Cook beets over medium high heat until tender. Drain. When cool or lukewarm, peel and slice. Heat a small amount of water in a pan and add onion. Cook and stir until translucent and tender. Add dill and beets, simmer until heated through. Season to taste with salt.
Enjoy warm or cold as a salad.
