Vegan Fudge

1 cup carob powder

1/2 cup coconut oil

1/2 cup almonds

1/2 tsp vanilla

2 soaked dates (add more depending on the consistency)

 Blend all ingredients in a food processor. Line a small pan with parchment paper. Spread into the pan and refrigerate until the batter has set, about an hour. Take the parchment paper out and separate from the fudge; cut into squares.

Feel free to throw in some large pieces of nuts or fruit if you so choose. I love to add goji berries and walnuts for some crunch.It’s a little piece of vegan heaven.
