Garden Wrap

 2 large collard leaves

1/2 cup, peeled chopped cucumber

1/2 cup chopped red pepper

1/2 cup sliced mushrooms

sprouts

Avocado pistachio pesto (see recipe)

Cut the collard leaves away from the stems, making flat pieces. Spoon pesto along the width of the leaf and top with your vegetables. Roll up into a wrap and enjoy.
