Listen up chocoholics! Now you CAN have your brownies and eat them too! I have been experimenting with carob lately; a wonderful substitute for chocolate. It tastes great with a chocolate-like flavour but without the health risks, additives or contamination that come with chocolate.
This recipe contains wholesome ingredients that promote good health and taste as good or better then a typical cooked brownie. No need to feel guilty about eating a whack-load of these bad boys!
1 1/2 cups walnuts, soaked at least 4 hours and rinsed very well
12 pitted dates
3/4 cups carob powder (you can also use cacao if you are afraid to step into the wonderful world of carob)
1 tsp vanilla powder
pinch of salt
Process the walnuts slightly to break them into smaller pieces not to create a powder.Add the remaining ingredients to the processor and process the mixture, adding a very small amount of water if necessary. Do not over-process. The batter will start to come together. Scoop the mixture into a 8×8 baking dish and press the mixture down firmly.
I like to top the brownies with coconut or walnut pieces. Try it with vegan icing!
