All Canadian Veggie Burgers


Just because we are classy Vegetarian Fabul-ista’s, doesn’t mean we don’t like to be part of a good old-fashioned Barbecue! In fact, I refuse to be the “I brought my lonely pathetic rubber-tasting, veggie dog kinda girl. When I RSVP to an event I bring gourmet that will make even the biggest of carnivores drool. You can keep your flesh of tortured animal… I get to have my burger and eat it guilt free too.

All of the following recipes are made for 4 veggie burgers. To cook the burgers; pan-saute or BBQ them according to package directions.

Super Italiano ‘Pizza Burger’
12 large basil leaves, cut into strips

3/4 cup pizza sauce, warmed

16 slices vegan pepperoni

4 slices mozzarella cheese

4 whole wheat hamburger buns, toasted

Top each patty with a slice of cheese during the last minute of cooking. Add the pepperoni to the pan to warm for the last minute as well. Remove the patties from the pan or grill and place on top of your whole wheat bun. Top with pizza sauce, pepperoni and basil leaves.

California Burger
1 avocado, sliced

1 cup alfalfa sprouts, loosely packed

4 slices tomato

4 slices cucumber

1/2 cup low-fat thousand Island dressing ( or see my recipe for a vegan version)

4 whole wheat hamburger buns, toasted

Remove patties from pan or grill and place them on the bottom of your whole wheat buns. Top with avocado, sprouts, cucumber, tomato and thousand island dressing, dividing evening.

SURF’S UP!

Bacon and Caramelized Onion Cheeseburgers
1/4 cup coconut or olive oil

2 large yellow onions cut into 1/4 inch slices

2 tbsp Agave nectar (if you do not have agave, you can substitute for honey)

2 tbsp dijon mustard

8 slices vegetarian bacon

4 slices of old cheddar

4 whole wheat hamburger buns, toasted

salt and pepper to taste

Heat oil in a large skillet over med-high heat. Add the onions and cook stirring occasionally until translucent, (usually about 5 mins). Reduce heat to low and cook until the onions are deeply golden, stirring occasionally, (about 45 mins). Stir in salt and pepper to taste and set aside to cool.

While the onions are cooking, whisk together the agave and mustard in a small bowl and set aside. Then, cook the bacon according to the package directions, and grill or pan fry the burger patties. Top each patty with one slice of cheddar during the last minute of cooking, and remove from heat and onto buns. Top with onions, bacon and mustard mixture.

Don’t forget about the seconds on your face!

Cantini
This recipe was inspired by my former place of employment, The Ale House Canteen in Kingston, ON. The original version of this burger was a customer favorite and I found myself making a veggie-friendly version of this for myself at home. It is a long process, but trust me its worth it.

Garlic Mayo:

1 garlic clove, crushed

juice from 1/2 lemon

1 cup soy mayonnaise

Mix all three ingredients together and chill until ready to use.

Onion rings:

Coconut oil

1/2 an onion (preferably sweet) cut into 1/3 inch thick slices or rings

1/4 cup seasoned whole wheat bread crumbs (season with 1 tbsp of both parsley and garlic power)

1/4 cup cornmeal

1 tsp sea salt

1/2 cup rice flour

1/2 cup soy milk or as needed

Preheat oven to 450 degrees F and grease a baking sheet with oil. Separate onion slice or rings and pick out the largest first. In a shallow bowl combine bread crumbs, cornmeal and salt. in a second bowl place the rice flour, and in a third the soy milk. One at time dip the rings in the soy milk, the rice flour, the soy milk again, and then the bread crumb mixture. Make sure to press firmly so that the onion is fully coated. place the individual rings on the baking sheet and bake for 25-30 mins until golden brown. Then sprinkle with sea salt.

Handful of Daiya

1/4 cup BBQ sauce

4 slices vegetarian bacon (if desired)

Cook the bacon according to the package directions, and grill or pan fry the burger patties. Top each patty with one slice of cheddar during the last minute of cooking, and remove from heat and onto buns. Top the burger with BBQ sauce and place 1 large or 2 small onions rings. Place a dollop of garlic mayo in the center of the onion ring and finish of with a slice of bacon.

Use left over rings as a side!
