Vegan Banana Bread
There is something to be said about short and sweet. For an afternoon quickie this recipe will do the trick. Fast, easy and guilt-free.
Preheat oven to 325 degrees. Line a standard bread pan with parchment paper.
In a large bowl combine the following:
1/4 cup Earth Balance vegan margarine
1/4 cup apple sauce
1 cup sugar
1-2 tsp vanilla
Sift in 1 1/2 cups flour, 1 tsp salt and 1 tsp baking soda.
Mash 3 very ripe banana in a separate bowl.Combine both mixtures and mix well. Cook for 60 mins or until a tooth pick comes out clean and dough-free. Remove from pan and let cool. Instant gratification is just one bite away…
