Homemade Fruit Candy
Unless you have the metabolism of a pre-pubescent boy, you are unable to eat all the delicious treats you crave daily… UNTIL NOW! These treats are so delicious and so good for you. Your craving for crap will be satisfied and your waistline will thank you.
1/2 cup golden raisins
1/2 cup dates
1/2 cup apricot
1/4 almondsorange or grape juice as needed
1/4 cup unsweetened shredded coconut
Process raisins, dates, apricots and almonds in a food processor until finely ground adding a small of juice if necessary to process mixture (This mixture should be dry and sticky not overly moist).
Form mixture into 1 inch balls with your hands and roll each ball in coconut. Place the balls in a covered container and refrigerate for 1 hour or until firm.
