Chocolate Chip Cookie Cake

There is something fabulous about a childish dessert served in an elegant way. Forget the milk and cookies, this dessert is to be served with a bottle of Merlot by candle-light. Crisp to the touch, with a burst of soft chewy chocolate. Savour the taste, indulge your senses, find yourself lost in the different textures.

Go ahead and indulge, I dare you…

Preheat you oven to 350 degrees F.

In a small bowl combine:

1 Cup flour

1 Tsp baking powder

1/2 tsp salt

In a larger bowl, melt 1/2 cup Earth Balance vegan margarine in the microwave, and mix in 1 Cup brown sugar until it has dissolved. Whisk in 2 tbsp apple sauce and 1 tsp vanilla.

Add the flour mixture and stir until combined. Add 1 cup of chocolate chips (or my personal favorite Chocolate chunks/pieces).

Line a 8 in x 8 in pan with foil and grease. Press your mixture in the greased foil. Bake for 22-28 mins or until a tooth pick comes out crumb-free.

DO NOT OVER-BAKE!

Lift out foil let cool for 30 mins and cut into even squares.
