Miso Gravy
2 tbsp coconut oil
1/2 red onion, diced
1 cup vegetable stock
1/2 tsp matcha
1 tbsp dijon mustard
2 tbsp miso paste
3 tbsp engevita
In a small saucepan heat oil over medium heat. Add onion and lightly fry. In a bowl whisk vegetable stock, matcha, Dijon, miso and engevita. Add mixture to onions and bring to a boil. Reduce heat, cover and simmer for 15 mins.
